Happy Father's Day!

I am super fortunate to be surrounded by some pretty amazing Dad's myself. I don't think many of us really appreciate our parents until we become adults and parents ourselves.
It amazes me the lengths my Dad went to stay involved in my life, even though he lived a couple of hours away for the majority of my childhood.
He called me every single day without fail - a fact that I found super annoying at the time, but now cherish. Despite the distance, he was always at my school plays, birthdays and holidays.
When he was finally able to move to the same city as me, he volunteered to host countless sleepovers and never got too grouchy about it.
Not only is he a great father, but he is an amazing grandfather to my kids as well.
My husband has of course been an amazing Dad to our son's, but it really amazes me how he has stepped up to be a father to my oldest son, Eli.
Eli is not his biological son, but other then the fact that they look nothing alike, you really couldn't tell. After being a single mom for Eli's early years, I can't tell you what an amazing feeling it is to have an equal partner in raising him.
So all in all, I am pretty dang lucky and I hope that you are too 🙂
Besides being Father's Day, today also happens to be my youngest son, Lucas' birthday. He is turning four today and this equally makes me happy and breaks my heart all in the same moment.

Last week, was another pretty successful week with keeping the kids away from sugar and excess carbs.
I am continuing to notice improved behavior, but I'm also noticing how difficult it is to keep them away from junk food. I REALLY wish that as a culture, we didn't feel the need to always be dosing up kids with sweets.
Next week, it's pretty much business as usual.
I've never cooked, or even eaten lamb chops to my knowledge - but I got some super cheap at Sam's Club Last week, so we are going to try them out. If you have any good recipes, let me know!
