Well, I survived a mini vacation with my kids - all by myself and we actually had a pretty good time.

The big hits of the trip were the hotel pool and our visit to Kentucky Down Under. The National Corvette Museum was kind of a bust for us since we are not really into cars and there wasn't much for the kids to do there.
When we decided to take this little trip, I knew that I didn't want to spend a ton of money. We are planning on taking a family vacation this fall (our favorite time of year to travel) and so our travel budget was pretty small.
We used Groupon to get a great deal on our tickets to Kentucky Down Under, and shopped around to find a reasonable hotel. We used also used ebates when booking the hotel, so we got 6% cash back!
We had a mini fridge and microwave in the hotel room, so before we left I made some taco meat and burgers. We had tacos with low carb tortillas for supper one night, and bunless burgers another. For lunches we had ham and cheese unwiches and hot dogs.
I'm not a total loser mom, so I did let the kids have dessert out. The first night they picked a snow cone shack - which was great for me, because they had sugar free options.
The second night they opted for an ice cream place, which wasn't so great nutrition wise, but sure did taste amazing!
It's hard to believe, but this week we are entering 'Back to School' mode!
All three of my boys are headed to new schools this year. I will have one in high school, one in middle school and one in preschool!
The oldest two have orientation this week with their first day of school a week later. Lucas, my youngest, will be starting preschool the following week.
