It's been 500 degrees here in southern Indiana this summer (not even exaggerating) and that means that frozen treats are no longer an option - but a full-blown necessity. It's a matter of life or death.
I've been on a real ice cream kick lately, but anyone who's ever read the nutrition info on a pint of ice cream only to realize that it is in fact NOT a single-serving treat knows just how hard it is to stick to the measly ½ cup serving size.
That's where Popsicles come in handy. Not only is it common knowledge that eating your food off a stick makes it taste 10x better, but the Popsicle also gives you a little portion control too.
Oh, and trust me (or the picture below) when I say that your kids will LOVE these. They are such a hit here that we actually just bought a second popsicle mold so we are never without!

To make these I used something I haven't purchased ever in my adult life ... Kool-Aid mix. It's the perfect thing to give that perfectly artificial orange flavor, with zero added sugar. My only complaint is the food dye, which I prefer to avoid. So if anyone knows something comparable without the dye - let me know!
This recipe yields 6 popsicles, but that will vary based upon the size of your molds. I can't recommend the molds I have enough! I love the classic popsicle shape. If you want to check it out, I have linked it below.
I sweetened these with confectioners swerve (aka erythritol), which is pretty much my go-to sweetener. But, I would imagine that you could substitute pretty much any sweetener that you like as long as you check the conversion.
If you are using swerve, I do recommend the confectioners over the granular as the granular can get kind of gritty when it's cold. If you don't have any confectioners on hand, try running the granular through your food processor until it's super fine.

Keto Orange Creamsicles
Ingredients
- 1 cup heavy whipping cream
- ½-3/4 teaspoon orange Kool-Aid mix
- 1 teaspoon vanilla
- ⅓ cup Confectioners Erythritol
Instructions
- In a large bowl, combine all the ingredients using an electric mixer. Mix for several seconds, then taste and adjust kool-aid and sweetener to taste.
- Continue mixing until the mixture is thick and has doubled in size.
- Fill popsicle mold with mixture. Tap the molds on the counter periodically to remove any air bubbles. Place the lids and/or sticks onto the molds and freeze until solid (at least 4-5 hours)
