    Keto Coleslaw

    This Coleslaw is the perfect keto vegetable side dish. It's super easy to make and keeps in the fridge for about a week making it a meal prep staple!

    This creamy keto cole slaw recipe was created to go with my keto fried fish - but it's a great side dish to have with just about any meal! I love making some during my weekly meal prep, for a quick veggie side dish to have on hand throughout the week. Not only is it low carb, but it also has plenty of healthy fats making it perfect for a ketogenic diet!

    Ingredients and substitutions

    To keep it simple, I use a bagged coleslaw mix. It does have a few carrots mixed in which I know some people avoid on keto. If you don't want the carrots you can simply shred your own cabbage.

    Assembly of low carb coleslaw

    Since the recipe doesn't use a ton of onion, I find it easier to use dried minced onion instead of slicing an onion to only use a little bit. You can use fresh onion if you like, or onion powder. For the fresh onion use about 3 tablespoon of finely minced white onion. For the onion powder, you will want to use a teaspoon or two.

    Also, this is a sweet coleslaw similar to what you would get from a fast food restaurant. I use Liquid stevia since it mixes in with the dressing so well and doesn't crystalize like other sweeteners might. You can substitute the stevia for any sweetener that you like or leave it out entirely if you prefer.

    This is a creamy coleslaw that uses mayonnaise, heavy cream, and almond milk to create a delicious dressing. For a keto vinegar-based coleslaw check out this recipe!

    Can I add other ingredients to the coleslaw for more flavor?

    Absolutely! You can add ingredients like sliced scallions, diced celery, chopped fresh herbs (such as parsley or dill), grated radishes, or toasted nuts for extra flavor and texture.

    Can I make keto coleslaw ahead of time?

    Yes, you can make keto coleslaw ahead of time. It often tastes even better after the flavors have melded. However, for the freshest texture, you might want to wait until closer to serving to dress the coleslaw.

    How long does coleslaw keep in the fridge?

    This coleslaw will keep for about 5 days in a sealed container in the fridge.

    Ingredients
      

    • 1 package Shredded Cabbage Coleslaw Mix about 8 cups
    • 1 tbsp Dried Minced Onion
    • ½ teaspoon Liquid Stevia
    • ½ teaspoon Salt
    • ⅛ teaspoon Black Pepper
    • ¼ cup Unsweetened Almond Milk
    • ½ cup Mayonnaise
    • ¼ cup Heavy Cream
    • 1 ½ tbsp Apple Cider Vinegar
    • 2 teaspoon Lemon Juice

    Instructions
     

    • Place the coleslaw mix into a large bowl and set aside. If desired, use a mezzaluna or a pizza cutter to chop the cabbage up into even smaller pieces.
    • In a separate, small bowl, combine the remaining ingredients to make the dressing - stir to combine. 
    • Pour the dressing over the coleslaw mix and stir until all the cabbage is well coated. You can serve it immediately, but it's best to allow it to sit in the refrigerator for at least an hour.

      Hello! Just wanted to point out that your recipe says 10.3g fat and then 4.1g fat. I assume that means carbs?

        It will keep in the refrigerator for up to a week with no problems, in fact, I think it's best when it's a day or two old!

      This coleslaw is amazing! I was just talking about missing KFC’s slaw and my sister in law sent me this recipe. It’s good right away, but let it sit a couple hours and WOW!
      I had to force myself to put it away! It’s a good thing I have enough ingredients to make another batch!
      Shh! I told my husband it’s my diet food! I want it all for myself! 😂

        Either mayo will work, but if you are watching your carbs then the regular is best. Heavy cream is also called heavy whipping cream. It’s usually in the dairy aisle next to the half and half and coffee creamers. If you can’t find it you can substitute half and half or whole milk. Hope that helps, let me know how it turns out!

      Hmm.. mine is a little alcoholy. ... how can I fix that? I used whole milk instead of heavy cream.

        I'm not sure what could have given this an alcohol flavor. My best guess would be the stevia. If that's the case I would add a bit of extra salt and pepper and maybe some extra mayo
