    This Weeks Menu - February 12, 2018

    I'm so sorry that this week’s menu post is coming up so late, but better late than never right?

    This weekend became unexpectedly full and I am really behind in blogging ... not to mention laundry and grocery shopping!

    Luckily it's been a great kind of busy, so I'm definitely not complaining.

    Friday I spent the morning with one of my little sisters, then had lunch with my mom and got a chance to spend several hours visiting with my grandfather.

    I haven't discussed this much publicly, but my grandmother passed away last spring and my grandpa has been steadily going down hill since. He was recently diagnosed with oral cancer and opted for hospice care vs cancer treatment.

    He is very at peace with this decision, which makes it easier for me to be at peace with it as well. Luckily he is still able to mostly care for himself and seems to be doing better then expected. Needless to say, i am trying to spend as much time with him as possible. 

    On Saturday we spent the afternoon with my mother-in-law. It was a great visit! I'm not just saying that either 😉 My mother-in-law is SO MUCH FUN to talk to. She is a great listener and has been through a ton in her lifetime so she is really able to give excellent advice. 

    Today (Sunday) I went with my dad and my boys to visit with my other grandparents who I don't get to see nearly as often as I would like. It was a wonderful day and all the boys actually behaved themselves very well (shocking I know!)

    I was SO busy in fact, that I didn't have a chance to open the Keto Krate that I received Friday, until today!

    We have a SUPER exciting week ahead!

    Monday and Tuesday are business as usual - work, work and more work 🙁 For supper we are having my instant pot taco soup because it's easy and delicious!

    Wednesday we will be having upside down pizza casserole. It's one of the kids favorite meals and I am planning on doubling the recipe and sticking one in the freezer to have another day

    Thursday night we will be having a fried fish and hush puppies. This is a recipe I'm working on for the blog, so if it turns out I will be posting it soon!

    Friday is where things get super exciting! We will be heading to the center for courageous kids for bravehearts family Camp! It is seriously the best time EVER. Are days will be super busy with archery, horseback riding, bowling, arts and crafts, swimming and plenty of other fun activities.

    All the food is provided while we are there so no cooking for me! I will be taking a few snacks to try and keep things keto friendly for myself. I will definitely share more about this experience later so be on the lookout!

    We will get home Sunday afternoon, so I'm just gonna toss a pork roast in the instant pot for a quick pulled pork supper.

    ... And that's it!
