Hey there! I hope that you had an amazing week!
Despite the stomach flu hitting two of my boys, and the first days back at school after winter break, and my lap top biting the dust - I have to say that the first week of the year was pretty great!
Anytime you start something new, including a new year, I think it brings on a sense of optimism and renewed energy. I don't know about you, but I am definitely feeling that this week!
Before I get to the week ahead, I wanted to take a second and address a question that I've been getting a bunch since I started sharing my weekly meal plan: Do my kids and husband eat keto? Do I fix them separate meals?

So now that I've filled you in on that, let's get to the menu!
This is the first regular week we’ve had in awhile, with the older boys having a full 5-day school week and my husband back to a regular schedule as well. With that in mind I have tried to plan easier suppers. I have a feeling we may all be just a tad worn out this week and I know that elaborate meals will really just be setting me up for failure.
Monday we will be having cheesy ranch chicken with broccoli - made by Eli, my 14 year old. This is a new recipe for us, so we will see how he does cooking it! It seems simple enough and I don't know how you can go wrong with cheese and ranch 🙂
Tuesday it's leftover night and Wednesday I'm making an instant pot taco soup which will be up on the blog soon! It's one of the recipes that I could eat every days - especially during the cold winter month and in the instant pot, it goes from frozen to finished in about 40 minutes!

Thursday I am trying out another recipe, that will *hopefully* be up on the blog soon - fried pork tenderloin sandwiches! Oh how I hope that works out! (side note - I still haven't decided on a 'bun' for this recipe. if you know of a great low carb bun that I can make or buy on amazon prime, FILL ME IN!)
Friday it's my birthday! My husband and I are taking advantage of some gift cards we got as Christmas gifts - and going out to eat sans kids! The kids will be having homemade frozen pizzas.
Saturday we are having chicken wings and I. CANNOT. WAIT!!! I cook them using my two favorite kitchen gadgets - the instant pot and the air fryer, and then top them with my favorite low carb barbecue sauce which you can find HERE! Any meal that includes that many favorites has to be good right?!? I sure think so!

On Sunday, it's going to be hamburger steaks with gravy and mashed cauliflower. The mashed cauliflower recipe will be posted on the blog this Monday, and the hamburger steaks and gravy will be up the following Monday, so be sure to check it out! They are DELICIOUS!
