Pizza is always a good idea if you ask me. Unfortunately, keto-friendly frozen pizzas can be hard to find and pretty pricy. Not to mention that you can't customize the toppings on store-bought frozen pizzas. Luckily with this recipe, you can keep your freezer stocked with pizzas at all times.

The recipe is seriously so easy that you may question why you haven’t tried it in the past.
Start by preheating you’re oven to 350 degrees, and prepare your pans with nonstick spray. I use 4, 7” round pans, but you could also use 8” round cake pans, small square pans, or even a large sheet pan.
Next, place the chicken, 1 cup of mozzarella cheese, and eggs in a food processor. Process until it forms a fairly smooth paste and there are no chunks.

Divide this mixture into your prepared baking pans, and spread it out evenly I used a little over half of a cup per pizza. Remember, as the chicken cooks, it will shrink some, so you want to spread it as thinly as possible and all the way to the edge of the pan. I used the back of a measuring cup, sprayed with non-stick cooking spray.

Bake the crusts for 15-20 minutes, or until the chicken is fully cooked. Remove the crusts from the oven and add marinara, cheese, and any other toppings that you like. Return it to the oven for 2-5 minutes, until the cheese has just slightly melted (this just helps keep the toppings attached to your pizza) If you would like to eat it immediately, continue cooking until the toppings are as done as you like them.

Remove the pizzas from the oven and allow them to cool completely. Then wrap them tightly in multiple layers of cling wrap and freeze them for up to 6 months.

To cook the pizzas from frozen, preheat your oven to 400 degrees. Then, place the pizza on a baking sheet and bake it for 15-20 minutes until heated through and slightly browned - or if you are like me - really browned!

Yes, you can use other meats like ground turkey or ground beef to make the pizza crust. However, the cooking time and texture might vary slightly depending on the meat used.
You can use a variety of keto-friendly toppings like low-carb marinara sauce, shredded cheese, grilled chicken, pepperoni, bell peppers, onions, mushrooms, olives, and any other low-carb vegetables of your choice.
Baking the crust before adding the toppings helps prevent this, but if you still find that the crust has too much liquid you can pat it gently with a paper towel to remove any excess moisture before adding the toppings. You can also bake the pizzas elevated on a cooling rack to allow any excess moisture to drain away.

Do you precook the chicken or is it raw before placing in food processor?

It is raw, you could also use pre-ground chicken from the grocery, but I think doing it myself gives it a more pizza crust like texture 🙂

It makes 4 pizzas total, using a 7 or 8 inch pan (although the pizza with shrink about and inch r so once cooked).
