If you read my post last week, then you might remember that I have been riding the struggle bus big time as far as fitness and nutrition is concerned.
I am SO happy to report that I am back on track!!
Thank you all SO much for the extra accountability, tips and support - you are seriously THE BEST!
I got SO many messages from people letting me know that you are struggling with exact same thing and I have to say, while I hate that this is something that so many people struggle with - it is SO comforting to know that I am not alone!
After chatting with some of you, and really reflecting on what made me stick to a workout plan in the past I think I know what I need to do, and even though I am only one week in - it seems to be working!

Looking at the week ahead ...
Monday and Tuesday will again be long days at work, so Eli and Trenton (my 14 and 9 year old) are in charge of supper. They will be making tacos, with leftovers for supper Tuesday. If you are trying to get your kids in the kitchen more, tacos are a great place to start!

Trenton got a part in his school play, and he begins rehearsal on Wednesday night so I am making a quick broccoli and cheddar soup that will *hopefully* be ready before he leaves.
Thursday we are having one of my favorite keto meals - cashew chicken with cauliflower rice! It's got such a great flavor, and reminds me of Chinese takeout. I usually double the recipe and freeze the leftovers for a quick supper or lunch on the fly.
On Friday we are going to try out the Pinterest famous "crack" chicken. I have seen SO many raving reviews, so my expectations are pretty high. have you tried it? If so what did you think?
On Christmas, I ... err Santa 😉 gave the kids "coupons" that they could redeem for special treats. One of the coupons was to allow them to have the meal of their choice and Eli is cashing in next Saturday with grilled burgers. Can we say WIN WIN??
This Sunday is the Superbowl and while I don't care one speck about the game, you better believe that I care about the snacks!! On Superbowl Sunday we generally just have appetizers for supper and this year is no exception. Other then wings and a beer cheese dip - I haven't set a menu yet but I will add the recipes to my Pinterest board as soon as I do!
