    This Weeks Menu -January 15, 2018

    Shew - remember that optimism I was talking about last Sunday? Well it was sure put to the test this past week! Monday morning I woke up with the stomach bug that my boys had the Friday before. Thank goodness for my husband and my 9 year old, Trenton, who both really stepped up and took care of the things I would normally get done.  My husband made sure that the boys got to and from school, and he took on the dreaded homework duty while Trenton cooked supper for everyone.

    Trenton made cheesy ranch chicken, and did such a great job! He and I have been binge watching old episodes of Chopped and he is getting down some of the lingo. After he cooked supper for everyone, he told me that it tasted great, but the presentation needed some work 🙂

    Thank goodness I was feeling better by Tuesday and was able to go back to work, but I came home to find my husband in bed with a fever. He had the terrible flu that has been going around. I quickly quarantined him to our room and directed the boys to "stay away from Dad!" Luckily they listened and *knock on wood* so far no one else has gotten sick.

    Call me crazy but I LOVE the snow! Especially when I don't have to go anywhere 😊 We only got a tiny bit - but the boys sure are enjoying it!

    Friday, was my birthday and the boys had a snow day from school. It's the first measurable snow that we've gotten in about 2 years (thank you global warming 🙁 )  I LOVED watching the boys, especially Lucas play.  It was nice to have them all home, but between that and all the illness going around our house, this week has been kind of chaotic and I feel SO behind. The laundry is piled up sky high and the house is a wreck - but now that I think of it, it's really not much different then the average Sunday!

    Thank goodness the weeks seems like it will be ending on a high note. Casey took me out to dinner last night and it was SO nice to get out of the house without the kids for a while! Tonight, we are all headed to my Dad and Step-Mom's house for supper to celebrate my Birthday, and I can't think of any better way to end the week then 2 nights in a row without having to cook!


    A look at the week ahead ...

    I've decided to put Trenton in charge of supper again this Monday since he did such an AMAZING job last week. I'm going to help him prep some meatballs today, so that tomorrow night (when I am still at work) he can just heat them up in some homemade marinara for supper. The boys will have traditional spaghetti and meatballs, and I'm just having the meatballs with some sauce and cheese.

    Tuesday, it's still the usual leftover night (can you tell I like routine much?) Wednesday, I am putting hamburger steaks and gravy with mashed cauliflower back on the menu, after it fell to the wayside in the middle of last weeks chaos. I am planning on posting the recipe Thursday, so be on the lookout!

    This week is full of birthdays in my family, as I mentioned -mine was last Friday the 12th, my Mom's is Monday the 15th, and one of my sister's is Thursday the 17th - So we are all going out to eat together Thursday night, at a local steakhouse.

    Friday and Saturday, I am making some recipes that I have been working on for the the blog. If all goes well, you can expect to see an upside down pizza casserole and peanut chicken VERY soon!

    I will be wrapping up the week with a cheeseburger soup. I have mixed feelings about this recipe, but I've been staring at it on pinterest for so long that I figured it was time to try it and decide for myself!
