You guys ---- I just wrote two thousand and freaking eighteen? How did this happen and where the heck is my flying car???
I thought that since this is the last post for 2017 - I would take a quick second to put some of my 2018 goals out into the universe and also to reveal my word of the year.
I am a huge believer in new years resolutions. Not because January 1 is some magic date - but because it's a great time for reflection on the past and looking forward to the future. Establishing goals for yourself is SO important, it encourages growth and accountability. Whether you do it January 1st or June 26th is less important then just doing it!
Looking back - 2017 was a year of discovery and growth. There wasn't anything amazing that happened - BUT, I know that a solid foundation was set for the future. I took a lot of time to really think and consider what I want for myself and my family and started the process of making sure that my actions align with that vision.
In 2018 I am going to focus on continuing that work and really putting some more actions behind ideas. This brings me to my word of the year:
THRIVE
I am shifting my standards from surviving and just getting by - to thriving. I want to really challenge myself this year and push the limits of what I'm capable of, and I think this is the perfect word to inspire me. This applies to every aspect of my life and just creating the word and putting it out there has given me so much energy.
Some specific goals I will be working on this year:
- Reach my goal weight and maintain
- Post to the blog 3 times per week - minimum
- Read 12 books
- Monthly date nights with Casey
- Monthly quality time with Trenton and Eli (alternating months)
- Establish a productive morning routine.

Okay, enough of that, Let's talk food!
Even though Monday is a holiday, I will still be working (oh the wonderful world of healthcare!) The boys are still on winter break until this Thursday - So they are in charge of supper again Monday night. We will be having tacos (taco salad for me) and then again with the leftovers on Tuesday.
Wednesday we are having Cajun chicken "Pasta" that we didn't get to last week. This is one of mine and my husbands favorite dishes. It's packed with veggies, and very low carb so it's always one of the first recipes I recommend to keto newbies.
On Thursday, it's another favorite - Loaded "potato" chicken casserole. You won't believe that there are no actual potatoes in this recipe. It's total comfort food and once of my go-to's when I am craving something carby.
This coming weekend has been declared Harry Potter weekend at my house. HBO Go will have every episode of Harry Potter available for streaming and me and my boys are PUMPED! We are sticking to some easy meals so that we can focus on what's really important ... watching every. single. episode. of Harry potter of course!
Friday I am making a pork roast in the crock pot, Saturday it's going to be another night of shake and bake chicken and then Sunday I am recreating the hamburger steaks and gravy with mashed cauliflower recipe so that I can photograph it and get the recipe up on the blog for you all 🙂

About last week ...
The big winners of this past week were the taco soup, which I made in my instant pot (recipe coming soon!) and the Mississippi pot roast which was in the slow cooker.
