What. A. Week.
Is it just me or do your young kids act up like CRAZY this time of year? I really hope it's not just me!
I'm not sure if you caught my Instagram story where I talked about the HUGE temper tantrum he threw in Target the other day (if not you can watch it below!) In the video I talked about how much I had underestimated stay at home moms, before becoming one myself. Ok, so technically I do work part-time, 2 days a week. But the rest of the time it's me and Lucas ALL.DAY.LONG.
Sometimes I feel like I will never get a break. I mean this kid demands attention all day and he still wakes up multiple times throughout the night most of the time. Of course I love him, but that doesn't change how hard it is.
All this got me thinking about how hard being a working mom was. I was always scrambling to get somewhere. And no matter what I felt like I was letting someone down and like I was always missing out on something. It felt impossible to find balance.
Now, as a mostly stay at home mom, I feel exhausted. I feel like I give so much to my kids, but that it's not enough. I worry that I am not providing enough financially. I go to bed (and sometimes even wake up) completely drained. Not just tired, but really questioning whether I have anything left to give.
Reflecting on all this has brought me to the conclusion that, no matter what, being a mom is really freaking hard. No matter what, we question ourselves and feel inadequate. But ya know what, it's also really freaking awesome. Those moments where you kid accomplishes something they have been working towards, or when they just wrap their arms around you and tell you how much they love you, are some of the happiest moments of life. It doesn't get much better then that.
In some way, knowing that it's pretty hard for everyone, makes it easier. Like, somehow we are all in this together. So when I feel the stress and negativity starting to pull me down, I am going to think of YOU! I am going to remember that whoever you are, where ever you are, you are likely feeling some of the exact same things as me.
I know that's not really what you came here for, so let's get down to business!
This week Christmas festivities are ramping up to full force! Not only are we sack dab in the middle of our advent activity calendar but we also have several parties to go to.
Monday and Tuesday are my busy days - so I'm making pulled pork in the crock-pot. I will be topping mine with sugar free barbecue sauce (you can find the brand I use HERE). I plan on serving it with some steam in bag veggies - which are seriously lifesavers!
Wednesday we are taking the kids to see Santa and I am making their FAVORITE supper - Keto shake and bake chicken with cauliflower mac and cheese. I use my air-fryer to cook the chicken and it turns out SO amazing! (You can check out the air fryer I use HERE!)
Thursday, Trenton - my 9 year old - has a Christmas family night at school, so I planned an instant pot (or maybe crock-pot) meal. I am making another beef roast, but this time I am going to try a Mississippi roast that I have been seeing all over Instagram. I am going to toss some carrots in with the roast for the kids, and I will have either a salad or zucchini.
Friday my husband and I are going to his work Christmas party, so the kids will have to fend for themselves. KIDDING! They will be taken care of - just not by me!
And guess what? Saturday it's another Christmas party -this time for my work. Honestly, I haven't decided if I am going to go or not. It's a pretty good drive and I doubt that I will be able to find a babysitter 2 nights in a row - Plus I hear too much socialization leads to an early death? I don't know - but it seems legit, right?? If I don't go, then we are having steak fajita lettuce wraps.
Wrapping up the week on Sunday - I have one of my personal favorites, cashew chicken with cauliflower rice, on the menu and I am already excited for it!

Other then dealing with a tantruming toddler - everything went pretty smoothly. We actually ate what I had planned every single night, which doesn't happen very often!
The stars of the week were the chicken wings and the hamburger steaks with mashed cauliflower. I will be sharing recipes for both of these sometime in the near future so be sure to watch out for them.
