Before we jump into the menu, I feel like I must take a second to get something out of the way...
How in the heck is it already December??? I swear the year just started - like, a month ago? I know I sound like a little old lady saying this - but each year I don’t think that time could possibly pass any faster, and each year it somehow does.
As a mom it’s so bittersweet. My 3 oldest kiddos will all be going to new schools next year - Eli and Vanessa will be freshmen in high school (WTF!) and Trenton will be moving on to middle school. So father time can seriously just STOP it already!
All of this thinking has made me so appreciative of the time we have together and makes me look at our simple and seemingly monotonous life with a different perspective. Sometimes I feel like I am not doing enough. I start comparing my lifestyle to others who seem to “have it all” and feel like maybe I have really screwed things up.
When I take the focus OFF of everyone else, and instead choose to just focus on my own family and most importantly my own kids - I realize that I am doing just fine. While I am far from a perfect mom, I know with complete certainty that I am the perfect mom for MY kids. The only thing we can never get back is the time, so I personally value time together over more money.
--It goes without saying that this is a personal choice that I am beyond lucky to have the option to make. I know that it may not be an option or the best option for every family, but it definitely is what works for us.--
If you are feeling a little caught up in the comparison game, or you are just feeling inadequate. I encourage you to turn off social media and turn into your family. I promise that you are doing just fine momma!
OK - So enough of the sentimental stuff, let’s talk food!
This week is setting up to be another pretty average week. The only thing that may prove to be a little extra stressful is my work schedule. As I mentioned last week, I work outside the home on Monday and Tuesday. My hours vary week to week and the past couple of months my workload has been super light. Well, that has all changed and it looks like I will be pulling 12 hour shifts both of those days.
This just means that my meal prep and meal plan are even more important. Casey, my husband, DOES NOT cook. I mean at all. So unless I want my kids to be eating pizza or fast food on Monday and Tuesday then I need to have something ready for them when they get home.
I decided to try a crock pot roast - although I honestly still don’t have a recipe and I’ve never had much success with roasts! I will likely just kind of wing it and hope for the best, but if you have a good, low carb beef roast recipe please feel free to share it with me! (HERE is a link to the recipe I tried, it was just OK)
As always we will be having leftovers on Tuesday to keep things super simple and affordable. Speaking of affordable - did you catch my instagram story the other day where I shared some sweet deals that I scored at my local Kroger? If not, you can watch it below!
Wednesday I am trying out a new recipe for Pizza Spaghetti that I am working on for a future blog post. If it turns out, I will post it for you all to see - and if not, well I won’t :).
Thursday we will be having a cheddar, broccoli and bacon, chicken bake (that’s a mouthful!) It’s easy and delish. Plus it’s a one dish meal and that means it's a winner for me! I may try making this in the slow cooker or instant pot - if so I will let you know how it goes.
Friday, I am going to try making an old, pre-keto, classic - Hamburger steaks and gravy with mashed cauliflower. I am crossing my fingers that this turns out since it used to be one of our favorite comfort foods! If it does you can expect to see a recipe posted here on the blog.
Saturday, we are straying from our usual pizza night and I will be using my air fryer to make some chicken wings. I’m planning on serving them with this sugar free barbecue sauce that I got in my Keto Krate a few month ago. We are going to have fried cabbage with them, which may seem like an odd pair - but I have half a head of cabbage that needs to be used, so I promise there is a method to my madness!
We will be rounding out the week with taco salads. I love preparing a Sunday supper that can double as a meal prep. So, I will be making extra taco meat and chopping up some extra lettuce so that I can have some on hand for lunches throughout the week.

Thursday night we had a meal that was loosely based on the chicken rollatini from Skinnytaste. I say loosely based, because I prepared miserably and didn’t have all the ingredients the recipe called for. It was still good, and I ended up eating it again on Saturday. Which brings me to the recipe we didn’t get to - the creamy herb chicken still eludes me! Eli (my teenager) had a friend over, so the rest of my family ate pizza while I ate leftovers. One of these days I will try that darn chicken recipe!
