If you are a regular visitor here, then you may have noticed that it has been a few weeks since I've shared my weekly menu post with you all.
After losing my grandpa a month ago, I have really been struggling to find my rhythm. Even though we were prepared to lose him, it still feels like the rug has been pulled out from under me in some way.
I grew up with a single mom who worked in the service industry. While she worked really hard to take care of me and my sisters, our life was pretty hectic. We moved almost yearly and since my mother worked long hours, many nights were spent at my grandparents house.
I never knew what the next day would bring and my grandparents were the only constant for a long time. Now that they are both gone, I feel like a security blanket has been snatched away. My grandma passed just a year ago, so losing my grandpa so soon feels like a cruel joke.
Before I go too deep down this path - let me just say, that I am fine.
I just needed some time to begin the process of grieving and I thank you all SO much for your support and patience. I really can't say enough nice things about those of you who have reached out to me. It helped so much and always seemed to come just when I needed it the most.
Alright, enough about that, let's talk food 🙂
My kids have been on spring break the last 2 weeks and as of Monday they are back to school. I am not exaggerating one bit when I say that we haven't done anything over the break. It has been nice, but I think that we are all ready to get back to the grind.
With the adjustment in mind, I tried to stick with pretty easy meals this week. Monday we will be having a super simple supper of zoodles with meat sauce. I serve it with my homemade marinara which is always a crowd pleaser.
You already know - Tuesday spells leftovers at our house and with this being Easter Sunday, I am expecting that there will be plenty of them!
Some of the other highlights of the week include the cashew chicken and cauliflower rice and the Cajun chicken "pasta". If you are missing Chinese takeout, then the Cashew chicken is the recipe you have been looking for. It's seriously amazing! The Cajun chicken "pasta" is my husbands favorite so I had to include it 🙂
