Hi Friends!
I am SO happy to report that I have successfully gotten back into my groove after weeks of just feeling off. (if you have no idea what I'm talking about then check out THIS POST)
Last week was perfectly ordinary, which is exactly what I needed.
As far as our meals went - we had WAY more leftovers from Easter dinner then I expected so we skipped several planned dinners last week to use up the leftovers.
It was great, but I will be A-OK if I don't see another ham until next Easter 🙂
The biggest hit last week was the Cashew chicken (recipe from ketoconnect.net) and an instant pot Alfredo that I improvised last night after spending the day at IU watching my step-daughters basketball games. I served the Alfredo over shredded chicken and broccoli and everyone loved it.
I have one son who SWEARS that he hates Alfredo - so I just told him that it was Parmesan mac and cheese sauce - he said it was the best mac and cheese sauce EVER. Can you say #momwin ??
On this weeks menu, you will notice lots of repeats since we had so many meals left on the meal plan from last week.
Otherwise, I SWEAR that I am going to shoot that pork chop recipe this week and have it up on the blog before next Sunday 🙂
We are also saying enough of this winter that won't end and firing up the grill this weekend. We have a hodgepodge of sausages and hot dogs that I we need to use up so come hell or 2 feet of snow - I am cooking on the grill.
