I think this week gives the phrase TGIF an entire new meaning - Thank Goodness It's February!!!
I know I'm not the only one who felt like January stuck around like a bad guest? This person said it best:
For us, this is theater season - AKA my son, Trenton, will be having play practice pretty much EVERY SINGLE night. This makes for some seriously hectic evenings, although I am NOT complaining! I know many families have multiple kids who are in multiple activities so I am just thankful, that we generally only have one activity to contend with at a time.
Otherwise, last week was business as usual. Our favorite meals were the cashew chicken from keto connect, and bunless bacon cheeseburgers (can't go wrong there!).
Speaking of cheeseburgers, we used the ground beef and the bacon that we got in our first butcher box and it was SOOO GOOD!

I haven't shared this yet, because I honestly wasn't too sure how it was going to go. But ... My husband and I have decided to integrate monthly "no spend" weeks into our routine. The plan is to do one, the first full week of every month, so this week will be our second.
For us, it's all about reducing clutter, saving money and really using what we have before we run out and buy something new. I will keep you all posted on how it's going.
With that in mind, pretty much all of our meals this week are things we have the we've been needing to use up.
Monday and Tuesday we are having a chicken pesto casserole that I froze a while back. I will share the recipe on my weekly pinterest board, but it doesn't include freezing instructions. I followed the recipe exactly, but froze it before baking. Then when it's time to to cook it, I just thaw it in the fridge for the day and bake it as directed - easy peasy!
Wednesday we will be having an enchilada casserole. It's another super easy (and freezer friendly) recipe that my entire family LOVES! I may try to cook it in the instant pot - if so I will let you know how it goes!
Thursday we are having cauliflower fried rice. I make it with eggs as the protein, so it's a really cheap dish if you are on a tight budget. It's also a great way to reduce your daily protein, if you are like me and consistently find yourself going over.
Friday we are having one of Eli's favorites - Bacon Cheeseburger Casserole. This is essentially a bacon cheeseburger quiche and if you haven't tried it yet - you'd better get on it!
Saturday night we are reviving our pizza night tradition with fathead pizza. I am still perfecting my fathead dough. I haven't found a "perfect" recipe just yet - so if you have one let me know!
We are wrapping up the week with a Sunday roast. I've finally found some great roast recipes, so now I pretty much want them all the time. I haven't decided which one I am going to make yet - but I will pin it as soon as I do.
