I have been getting a ton more views on my weekly menu posts here lately, which I LOVE because I feel like these posts are really just me being me and chatting with friends.
Since there are so many of you who are new here, I thought that I would take a second to let you know what you can expect from these weekly posts.
I obviously share my family's menu for the week ahead (duh) but I also like to give a recap of the previous week, projects that I am working on, and really anything else that I would sit down and chat with a friend about.
I know there are some of you who are just looking for the meal plan, so you can always scroll right on through until you see the meal plan graphic 🙂
If I am cooking one of my recipes then I will link to it in the article, but I always share any recipes that I am using on my weekly menu pinterest board so be sure to follow me there too!

You may remember a couple of weeks ago, I decided to start the 52 lists for Happiness Journal. You can read that post HERE! This was my first week - and boy did I pick a cruddy week to start.
I normally work 2 days a week outside of the home, then the rest of the week I am home taking care of my 3 boys and working on the blog.
Last week I volunteered to cover a coworkers vacation and so I was at work 5 days, which I am totally not used to.
I did manage to get some journaling done, which is a testament to just how easy this journal is to manage. You literally just write a list. You can pick it up and put it down whenever the mood strikes and then go on about your business.
This week the prompt was to simply write a list of what is making me happy right now, then at the end of the week (AKA today) to reflect on how I can integrate these things into my daily life more often.
The first thing I wrote on my list was having fresh flowers in the house. Since last week was mothers day, I have a couple of bouquets sitting around and I really love how it brightens up the house.
So, as simple as it is, that's what I'm going to try to keep doing. It is a small and simple thing, but it does make me feel happy and it will be super easy to maintain.

This week is pretty ordinary, and it's probably the last ordinary week we will have for a long time since it's also my kids last full week of school and the last week before we finally have my step daughter for the summer!
I have a love/hate relationship with summer break. I love the casual and carefree vibe, but keeping the kids fed and entertained is a full time job in and of itself (if you are a teacher, you have NO IDEA how much you are appreciated!)
So anyway, back to this week ...
I let everyone in my family pick a meal this week my husband is the original Burger King - so he went with the sliders. Which worked out great for me, because I am working on a new recipe for hamburger buns.
Eli, my oldest, would have probably picked burgers himself, but since they were already claimed he went with the loaded cauliflower casserole - it's seriously delish! Next up, my 10 year old, Trenton chose club sandwiches.
I'll give you 1 guess which meal my 3 year old chose ... yep, you guessed it! Chicken Fingers, the quintessential food of childhood.
The rest of the week I just filled in with things that we have in the freezer. I am still not 100% sure how I am going to make the ribs, so if you have a good recipe, please share it below!
