Preheat the oven to 375℉. Heat the oil in a large heavy bottomed, oven safe skillet over high heat. Season the pork tenderloin with salt and pepper
1 ½ tablespoon Avocado Oil, 2 ½ lb Pork Tenderloins, 1 teaspoon Salt, ½ teaspoon Pepper
Add the pork tenderloin to the skillet and cook for 3-4 minutes on all sides. Remove the pork from the pan and set it aside. Reduce the heat to medium-low.
Add the onion and rosemary. Cook for 1 minute or until lightly golden, scraping up the bits from the bottom of the skillet as you stir.
¼ cup Yellow Onion, 1 teaspoon Fresh Rosemary
Add the brown sugar, vinegar, mustard, and the chopped peaches to the skillet. Stir to combine, then remove from the heat.
⅓ cup Brown Sugar, 2 tablespoon Apple Cider Vinegar, 1 tablespoon Dijon Mustard, 3 Large Peaches
Return the pork tenderloin to the pan then bake it in the preheated oven for 10 minutes or until the pork reaches an internal temperature of 145℉
Let the pork rest for 5-10 minutes before slicing and serving topped with the peach glaze from the skillet.
