Now you can have your favorite breakfast whenever your heart desires! This French Toast in a Mug only takes a few minutes to whip up using a microwave and simple ingredients. It can also be easily adjusted to fit keto, gluten-free, and paleo diets!
Cut or tear the bread into approximately 1" cubes.
Add the eggs, maple syrup, heavy cream, cinnamon, and vanilla to the mug. Stir until everything is well combined.
Add the bread and blueberries (if using) to the mug. Stir to combine making sure that all of the bread pieces are well saturated with the egg mixture.
Microwave for 1 minute, carefully remove from the microwave and stir. Return the mug to the microwave and cook for an additional 90 seconds. Let the mug sit in the microwave for 2 minutes before removing.
Serve with additional syrup and berries if desired!
