This delicious Carrot Cake Cocktail is the perfect drink for Easter or any other spring occasion. Made with vanilla vodka, amaretto, carrot juice, and classic carrot spices, this easter cocktail is perfection!
Combine the sugar, cinnamon, and allspice. Reserve 1 teaspoon of this mixture for later. Place the remaining mixture on a plate. Moisten the rim of your glass with a little bit of water or extra carrot juice. Dip the moistened rim in the sugar mixture. Set the glass aside while you prepare the cocktail.
¼ cup Sugar, 1 teaspoon Cinnamon, ¼ teaspoon Allspice
Place the vodka, amaretto, carrot juice, the reserved teaspoon of the cinnamon sugar mixture, and a handful of ice into a cocktail shaker. Put the lid on and shake until the liquid is chilled.
2 oz Vanilla Vodka, 2 oz Amaretto, 1 oz Carrot Juice, Ice
Strain the liquid into the prepared glass and discard the ice. Add the ginger ale and give it a quick stir. Add fresh ice if desired.
2 oz Ginger Ale
If desired, garnish with a Candied Carrot Twist, and enjoy!

You will not use all of the sugar mixtures. If you are making more than 1 cocktail it is not necessary to double (or triple, etc) the sugar and spices.
