This delicious Carrot Cake Cocktail is the perfect drink for Easter or any other spring occasion. Made with vanilla vodka, amaretto, carrot juice, and classic carrot spices, this easter cocktail is perfection!

Carrot Cakes are a classic spring dessert. This cocktail has all the flavor of its namesake and is perfect to serve at easter or spring parties.

Ingredients and Substitutions
- Vanilla Flavored Vodka - Vanilla vodka is easy to find but if you cant find you you can use regular vodka + 1 teaspoon of vanilla extract. You could also use whipped cream vodka or even cinnamon vodka.
- Amaretto - Amaretto adds a touch of sweetness and a great flavor to this cocktail.
- Carrot Juice - If you can't find plain carrot juice, you can use a carrot juice blend - orange and carrot, or carrot and ginger would both work very well.
- Ginger Ale - Regular or diet ginger ale both work great. You could also use lemon-lime soda.
- Sugar and Spices add the classic flavors of carrot cake. You can omit the allspice, but don't skip the cinnamon.
- Ice

Instructions
This cocktail is SO easy to make. Start out by combining the sugar, cinnamon, and allspice. Reserve 1 teaspoon of this mixture for each cocktail that you wish to make and place the remaining sugar onto a shallow saucer.
Moisten the rim of the glass with water or a little carrot juice. Then dip the rim in the sugar until it is coated. Set the glass aside while you prepare the rest of the cocktail.
Next, simply add the vodka, amaretto, carrot juice, the teaspoon of reserved cinnamon sugar mixture, and a handful of ice to a cocktail shaker. Secure the lid and shake it until the liquid is chilled.
Strain the liquid into the prepared glass and discard the ice.
Add a splash of ginger ale to the cocktail. If desired, add fresh ice to your glass. Garnish the cocktail with a candied carrot twirl if desired and enjoy!
Variations
- Make it sweeter - if you find this cocktail too strong or not sweet enough you can add a ½ to 1 teaspoon of simple syrup.

Equipment
Mixing up cocktails is so easy to do when you have the right equipment. Luckily you don't need anything fancy either. To make this cocktail, you will need the following:
- Cocktail shaker
- Cocktail strainer - Many cocktail shakers have strainers built into the lid. Be sure to check yours before you buy a strainer.
- Small plate for the sugar rim
- A cocktail glass - any cocktail glass will work. I used a lowball glass
- A jigger or measuring cup with ounces
Storage
Many people don't realize that you can make most cocktails, including this one in advance! You can mix as many as you need, then store them in the fridge until you are ready to serve. Before serving be sure to stir the cocktail as some of the ingredients will settle over time.

Moisten the rim of your glass with a little bit of water or extra carrot juice. Dip the moistened rim in the sugar mixture.
