Stale bread works best for french toast casserole. If you only have fresh bread on hand lay the slices in a single layer on a baking sheet. Bake them in the oven at 300 degrees for 20 minutes just to dry them out a little.

Whisk the eggs in a large bowl with half and half, vanilla, and cinnamon.

Pour the egg mixture into a greased casserole dish, over top of cubed brioche.

For overnight French Toast Casserole, stop here. Cover the casserole and refrigerate for up to 24 hours. When you are ready to bake, just pick up the recipe where you left off.

Mix together melted butter, cinnamon, and brown sugar. Drizzle this mixture over the top of the casserole.

Bake until it is golden brown and the casserole is set in the center.

Combine cream cheese, maple syrup, & vanilla. Pour over the top of the casserole.
