Preheat the oven to 400° F and line a baking sheet with parchment paper or a silicone baking mat.
Arrange the cheese into small circles, about ½ tbsp of cheese in each. Leave about ½ inch between each pile of cheese. *For the Pizza Crisps, combine the three kinds of cheese in a small bowl before putting them on the baking sheet. *For the Taco Crisps, combine the cheese with the seasonings in a bowl before putting it on the baking sheet.
For the Pizza and Jalapeno Popper Crisps, sprinkle the toppings evenly on the tops of the cheese piles.
Bake in the preheated oven for 5-7 minutes, then remove from the oven and allow to completely cool before removing from the baking sheet.
Store leftover crisps in the fridge for up to a week. If you prefer to eat them warm you can reheat them in the oven at 350° F for 2-3 minutes, or in the microwave for 20-30 seconds.
