It's the final countdown ... to Christmas that is! This week is yet another full of Holiday festivities and time spent with family.
This makes meal prep even more important and luckily I have found a super easy meal prep strategy that has been saving me crazy amounts of time and money by preventing food waste and ensuring that I use what I already have on hand.

Monday and Tuesday are the boys last day of school before winter break and also very long days at work for me. I am going to try my hand at keto chili - which is basically my normal chili recipe minus the beans and spaghetti. I recognize that this may not seem too unusual for a huge chunk of you guys. Do you typically put beans and/or pasta in your chili? Do me a favor and let me know in the comments below 🙂
Wednesday will be a quick date night since my Dad and Step-Mom have volunteered to take the kids to a holiday activity. Casey (my husband) works Wednesday and has basketball practice, so I am sure that most of my night will be spent wrapping gifts and watching Christmas movies on Netflix alone - which sounds absolutely amazing to me! We do plan on grabbing a quick supper out together.
Thursday, I am going to once again put that creamy herb chicken on the menu and hope that I actually get to make it. I swear that every single time (not even exaggerating here) I log onto my Pinterest, someone else has posted raving reviews for this recipe and FOMO is seriously setting in hard.
If you've followed my menu posts, you know that I have put this recipe on my menu SO many times. Each time something happens comes up and we end up having something else. I WILL not be foiled this time!
We are going to a Christmas party for the basketball team that my husband coaches on Friday night. It's a potluck style supper, and I am pretty sure that there won't be many low carb offerings, so I will likely eat leftovers when we get home.
Saturday I am trying something totally new and maybe crazy - keto chicken pot pie. If it works out, you can bet that I'll be sharing a recipe here! If not we shall never speak of it again 🙂
Christmas eve is on Sunday and we will be spending it with family at my mom's house. She usually makes all the food, but I may bring a low carb dessert if I have time.
Let's talk about last week!
The big winners last week were the BBQ pulled pork - which we had Monday and Tuesday. It's hard to beat shredded pork and sweet barbecue sauce! (You can find the sauce I use HERE!)
The Mississippi beef roast I tried was just OK. The kids thought it was too spicy and it was a little tough. I think I am going to tweak the recipe and try it again sometime because I am not a quitter 😉
Saturday night, we had tacos using the leftover meat that I made in my meal prep and we will be having the steak fajitas tonight instead of cashew chicken.
