Step

Bring the sweetener, heavy cream, and almond milk to a simmer over medium heat. In a separate bowl, whisk the egg yolks with xanthan gum.

gradually whisk in the warm cream mixture with the egg yolks. One it is all combined, return the mixture to the stove top over medium heat. Bring to a low boil whisking constantly.

Remove from the heat and stir in the butter, chocolate chips, and vanilla extract until completely smooth.

Pour the filling into a pre-baked crust and Place a piece of plastic wrap gently on top and refrigerate 4–6 hours or overnight, if desired.

Top the pie with meringue and bake for 10 minutes OR top it with fresh whipped cream and REFRIGERATE until ready to serve
