Step

Whisk together the dry ingredients. Then grate the butter into the flour. Gently mix to coat the butter in flour.

Add half of the buttermilk and quickly work the liquid into the flour. Add more buttermilk as needed until you have a dough that stays together.

Dump the dough onto a floured surface and flatten it. Cut it into fourths and place the pieces into a stack. Smash the stack down again and repeat this process 3 times adding additional flour if the dough becomes too sticky.

Press the dough to ½ inch thickness and cut out the biscuits.

When cutting out the biscuits, be sure to press straight down. Twisting the biscuit cutter in the dough will prevent the biscuits from getting tall and flaky.

Place the biscuits in a cast iron skillet or baking pan and bake for 15 minutes or until they are golden brown.
