Step

Pat the roast dry and season it all over with salt and pepper

Step

Heat avocado oil over high heat. Cook the beef for 2-3 minutes on all sides.

Remove the beef and set it aside. Cook the onions, garlic, celery, & mushrooms for about 5 minutes.

Add the wine, broth, mushroom soup, onion soup mix, vinegar, thyme, & red pepper flakes. Bring to a simmer.

Return the beef to the pot. Add the rosemary and bay leaves. Cover and bake for 2 hours.

add the carrots and return to the oven for an additional hour.

Remove the beef and carrots. run the liquid to a mesh sieve and discard the solids.

Set aside 1 cup of the remaining liquid and whisk in flour. Then, whisk this mixture into the remaining liquid. Bring to a simmer and cook until thickened.

Step

Serve the roast and carrots over mashed potatoes and topped with the gravy.
