One of the things that I plan on posting regularly here at This Mom's Menu, is my family's weekly menu. I know that may be a total shock considering the name of this blog and all :).
This week we are welcoming some much needed normalcy. As of now, our calendar is pretty bare with nothing out of the ordinary. After the chaos of a sick toddler and the Thanksgiving holiday last week, a boring week is A-OK with me!
I am working Monday and Tuesday, so it will be a chicken pesto casserole from my freezer for supper on Monday, and leftovers on Tuesday. I almost always plan leftovers on Tuesday to keep things simple. Not to mention it eliminates food waste and cuts back on our grocery bill.
Speaking of the grocery bill - this week we are eating completely from our freezer and pantry stockpile. I generally stock up on food when it's on sale, and then meal plan based upon that. With the holiday season in full swing, I am dipping into our stockpile so that our bank account can escape December relatively unscathed. We budget money throughout the year for Christmas, but it seems like there are always extra expenses this time of year.
Wednesday's supper is another simple one - baked tilapia with steamed broccoli. I don't follow a recipe for this, I just sprinkle the tilapia with some lime garlic seasoning and bake until it's done. You can find the seasoning that I use here! I usually top the broccoli with butter and sometimes a little freshly grated Parmesan cheese.
For Thursday, I am trying a new recipe. It's Chicken Rollatini from skinnytaste and it looks SO yummy! I may have to make a few tweaks to make it a little more keto friendly, but it shouldn't need too many adjustments! Friday is another super simple meal with burgers on the grill. Despite the cold weather, we make use of our grill all year long and I don't know about you but I could eat burgers pretty much any day of the week!
When we grill, I almost always throw some zucchini on, because grilled squash makes me a happy mom. I just use my misto to spritz it with olive oil, then sprinkle with salt and pepper and grill until it's soft and slightly charred. I like mine pretty charred on the outside, but not too soft on the inside, and the rest of my family just likes it barely cooked at all.
Saturday, we are trying another new to us recipe - Creamy herb chicken. I have been eyeballing this recipe for the longest time, but keep forgetting to put it on my plan. Lately I keep getting Pinterest notifications from all of the other people trying it (and raving about it) so I had to include it this week! I will definitely report back with how it turns out!
Sunday I am cooking up one of my favorites - sausage and peppers! Again, I don't have a recipe for this. I just toss fry the sausage and chopped peppers and onions in my cast iron skillet with a little oil. I season it with salt, pepper and sometimes a little garlic and oregano. I haven't had this dish since going keto, but I finally found some really low carb polish sausage at the grocery the other day, and I can't wait for this supper 🙂
