Well here we are friends ... only 2 more days of school left then it's officially summer vacation for my kids.
This brings on some mixed emotions as I of course love my kids and want to spend as much time with them as possible - but they also drive me crazy sometimes, well really a lot of times.
Besides my 3 boys, my 13 year old step-daughter is staying with us for the summer. I am sooo looking forward to seeing her and having another girl in the house, but it will definitely be an adjustment.
With her here, we will have 2 teenagers, 1 preteen and one toddler all in our teeny tiny home.
To top all of this off, I've committed to keeping the kids on a keto diet as much as possible.
Pray for me.
It's safe to say that I am going to need to stay organized and productive to survive this summer. I've got daily schedules written out, and have planned out most of my blog posts for the summers.
I've got a well stocked pantry and fridge, full of low carb snacks and foods that my kids have said that they will eat.
Some of the things we have stocked up on are: parm crisps, jerky, nuts, cheese sticks, eggs, bacon, strawberries, hamburger patties, veggies and ranch dip, low carb tortillas and peanut butter.
I will keep you guys posted on how this all goes and if you are interested then I can share my kids breakfast and lunch menus as well.
Suppers this week are pretty straightforward. I have to work on Memorial Day (ahh the joy's of working in healthcare) So supper is just business as usual with tacos, and then leftovers on Tuesday.
Wednesday is the kids official last day of school, so they have chosen to have pizza for supper. It's been awhile since we've had this, so I am already looking forward to it.
On Thursday I am trying a new pork chop recipe and the rest of the week it's back to some of our old favorites.
You can find all the recipes I am using this week on THIS pinterest board. I update it every Sunday, so if you aren't reading this in 'real time' then you can search my pinterest for the recipe. If you can't find it then it likely didn't make the cut.
