Hey friend 🖐
I hope the past week has treated you well. It has been pretty uneventful around here which is just fine with me!
I have been mulling over making some changes to this weekly menu post and wanted to run it by you to see what you would think.
First, and the most major change which I have already made is reducing the amount of breakfasts, lunches and snacks that I have on the menu. We honestly just don't eat that much variety in those meals with the kids back in school.
I usually don't eat breakfast during the week and lately I have only been making one breakfast for the kids. On the weekends we generally have one family breakfast and then the other day we just fend for ourselves.
For Lunch, the boys either pack a super simple lunch (usually one of my homemade lunchables or a low carb PB&J) and I have either leftovers or a sampling of whatever recipe I am working on for the day.
So the only real variety is with supper. I know it may be boring, but it's also effective 🙂
The other change, that I was hoping to get your input on is switching to a monthly meal plan. I would still share the same amount of menus, but just in a once a month type of post instead of weekly.
These posts are fun to write, but they do take a ton of time and with all the extra work I'm doing for the cookbook, time is something that there is never enough of!
My plan as of now, is to try it out in October and see how it goes. So stay tuned and let me know what you think.
This weeks menu
Here are the recipes for all the items on the menu this week:
- Crispy chicken thighs
- Cauliflower rice pilaf
- Keto fried fish
- Cole Slaw
- Keto hush puppies
- Hamburger steaks and gravy
- The best ever mashed cauliflower
- Salmon cakes
- "Crack" Broccoli
- Cheesy spaghetti squash and pork chop casserole
- Slow cooker pork carnitas
- Mexican street corn salad
For my kids breakfasts this week I am making Sausage pancake muffins, and this weekend we are having my low carb waffles.

Sweetie, your meal plans are so awesome that it doesn’t matter in which format they come. If it helps you to do monthly, go for it. In fact, I might personally prefer it so that I could have a little more flexibility in my meal planning based on what we have here. I’m just grateful that you are putting these out there for us (and for free, at that)! Every single one of your recipes that I’ve tried has been a huge hit so far! So, you do what’s best for you and don’t worry too much what others think. If they can’t or won’t support you, they don’t need to stick around. 🙂
