First and foremost, thank you to all of you who took the time out to respond to last weeks menu post, and/or my email newsletter where I discussed some changes I was considering for this weekly post.
It never fails to amaze me how kind you all are. The response was so positive and understanding, and so with your help I have decided to try out monthly menus instead of the weekly ones I have been doing.
Beginning October, I will just share these posts once per month. If you are on my email list, then I will still send out emails once a week and I am working on something extra for email subscribers. I am thinking maybe complete weekly menus, (with breakfasts, snacks, lunches and suppers) and/or weekly grocery lists to go with the menus ... or something along those lines - So let me know what would be the most helpful for you!

For this weeks menu, I am trying to get rid of all the stuff we have in our freezer, so it's a bit of a hodge podge. We have a small deep freezer along with our regular freezer - and they are both full of half used packages of frozen veggies, hamburgers and other random things. So the goal is to get rid of as much as we can.
This week I am going to try to get my eating window down to about 4 hours. I have gotten away from intermittent fasting lately and I can tell that I am just not feeling as well. I won't be eating breakfast or lunch, unless I am really feeling hungry.
For the kids breakfast this week, I am making a double batch of my Keto Breakfast Casserole. Their lunches will be sandwiches made on keto bagels. For snacks, they have been loving Oikos triple zero yogurt, nuts, cheese and hard boiled eggs.
Here are the recipes I will be using for this weeks suppers:
- Texas Chicken Nachos - I have half of a Sam's Club bag of bacon pieces, and some random chicken breasts in the freezer so this recipe is perfect. I am going to buy some sour cream and heat up some frozen veggies, and voila, we have a meal that everyone loves.
- Zucchini Lasagna - I actually made this a while ago and froze it. I can't remember for sure what recipe I followed, But I do know that I have made the one I linked to and it was good. I have no idea how it will be when I reheat, but I figure at worst we will have lasagna soup 😂 I use my own marinara sauce which is to die for, if I do say so myself!
- Chicken Pesto Casserole
- Salmon - I have a few pieces of salmon and a few pieces of tilapia, so I am going to make this with both fish and none of the veggies.
- Roasted Cabbage
- Fluffy Keto Waffles
- Cauli Mac
- Coleslaw
