There are only 3 days until my youngest goes to pre-school for the first time and I'm not sure at all how I feel about it!
Part of me is looking forward to 2 ½ hours of kid free time. I know that I will be able to get so much work done and it will be quite. Quiet is totally new to me and I'm excited to try it out 🙂
It will also be great for Lucas. He is super excited to make friends. Since he has never been in daycare, I think it's going to be a great way to get him socially ready for Kindergarten next year.
But on the other hand, he's never been to daycare and I have spent almost every single moment of the last 4 years, 3 months and 2 hours (but who's counting) taking care of him and I'm not ready to give that all up.
We met with his teacher last week and he was very well behaved and excited. She was really nice and I am confident that he will be just fine without me ... maybe too fine actually!
It seems like all the "Lasts" are SO much harder with Lucas, because he is the last of the last. With my oldest two boys, I always knew that there would be another kid in the future to experience all these things with so it was a little easier. But with Lucas, this is really it.
Next week I will fill you in on his first day and how he (err how I) did with the transition. I'm sure that there will be some real comedic gems in his retelling of the days events.
If you read the last couple of weeks posts, you know that my older kiddos went back to school a little over a week ago.
It always amazes me how strange and chaotic the first few days of school feel, but how quickly we fall back into a rhythm.
At the time I am writing this, I just dropped them off on the last day of their first full week and already feel like we may as well be a semester in. Eli, my oldest still isn't a fan of high school, and Trenton has made an almost seemless transition from elementary school to middle school.
This coming week we have a few evening appointments. I have tried to stick with easy meals or meals that can be made ahead of time.
Also, even though it's still 90 degrees outside, I have found myself adding more fall foods to the menu lately. I blame it on the back to school season!
Here are all the recipes I will be using this week:
- Greek Meatballs with Tzatziki Sauce
- Low Carb Chicken Pot Pie
- Cauliflower Fried Rice - I usually add meat or extra eggs to this recipe to make it a complete meal.
- Zoodles and pesto with grilled chicken - no recipe here, I buy the jarred pesto from Aldi, Pre-Cooked Grilled Chicken Breast from Sam's club and serve it over zoodles, easy peasy!
- Hamburger Steaks and Gravy with Mashed Cauliflower
- Easy Cashew Chicken
- Egg Loaf
- Almond Butter Mug Cake
- Easy Make Ahead Breakfast Scrambles
- Homemade Lunchables
- Greek Zoodle Salad - I will have this with leftover Greek Meatballs!

Is there away I can print your menus and recipes? My Dr. said I'm border line diabetic type 2 and I do NOT want to take shots, I would appreciate any help you can give me. Thank you

Hey Nellie! You should be able to print all of my recipes by from the recipe card. There should be a button that says "print" To print the meal plan, you should be able to right click the meal plan image and select print from there.
Also, Pinterest may be a great option for you! It's a great and easy way to save recipes and articles for looking at later. Almost like an online filing cabinet 🙂
