Hey there!
Don't hate me for saying this, but I just wrapped up the MOST productive week I've had in a long time and it feels amazing!
You know those annoying little tasks that always seem to get pushed off for another day, and that other day never seems to come?
Yeah? Well I did them all last week.
On top of the little things I had been putting off, I also managed to work an extra day and spent one day visiting my grandparents.
To top it all off, my house isn't even a complete disaster!
Seriously - who am I??
One thing that was sacrificed in place of productivity was some of the meals I had planned. There were a few nights last week where I had to choose either get s*** done or cook the supper from my meal plan.
I went with option A. Instead of cooking a big elaborate meal, I grabbed a back of burgers and some frozen veggies from Sam's Club. (Check out THIS POST for keto friendly my Sam's Club must haves!) We cooked the burgers on a George Forman grill and the veggies went into the microwave.
Supper was on the table in about 15 minutes and everyone was happy. This my friends, is what we call a win win.
Not only did it help make my days SO much smoother - it was also a reminder that sometimes doing 'just enough' is plenty.
As a mom (and a human) I sometimes feel so much pressure to do everything perfect. Last week was actually a huge reminder that sometimes perfect sucks and that by taking the pressure off of the things that really don't matter, I was able to focus my mental and physical energy on the things that really DID matter.
So once again, you will notice several repeats from last weeks meal plan. The pork and Cajun chicken "pasta" are both carryovers from last week. You may also be surprised to see burgers on the menu again - but the kids actually requested them so why mess with a good thing?
I tried to keep the rest of the meals pretty simple as well, although I have a sneaking suspicion that kielbasa and cabbage won't go over as well as the burgers 🙂
If you have a minute let me know what your "wins" were last week. No matter how small they may seem, they should be celebrated because being a parent is freaking hard and we don't celebrate each other nearly enough!
