Lately I have been obsessed with marinated mozzarella balls. They are so delicious and perfect for snacking.

Unfortunately the store bought varieties are mostly made with canola or even vegetable oil. There is so much new information emerging about potential health issues associated with higher levels of omega 6 fatty acids (this is mostly what is in canola and vegetable oils).

For more information on Omega 6 fatty acids and which oils are highest check out THIS article!

In place of the canola oil, I used a blend of extra light olive oil and walnut oil. Extra light olive oil has virtually no flavor, so it really lets the herbs shine, while the walnut oil has a subtle nutty flavor. If you don't have walnut oil, don't worry, you can just use entirely olive oil.

In fact, you can substitute pretty much any mild flavored oil that you would like, as long as it remains liquid when cold.

I also used fresh basil, because it's pretty much the only plant on the entire planet that I can actually grow. But you could use dried basil as well, just cut the amount in half and then add more to taste.

    • 2 tablespoon fresh basil chopped
