These delicious air fryer potato wedges are the tastiest side dish or snack. Using an air fryer makes these wedges super crispy on the outside, but soft and tender on the inside.

Potato wedges are arguably one of the best ways to eat a potato. These wedges are easy to make and go well will just about any main course.
I especially love these air fryer potato wedges with my homemade sloppy joes, parmesan-crusted tilapia, or sweet potato turkey burgers.

Ingredients and Substitutions
The ingredients for these air fried potato wedges are super simple. I chose to keep the seasoning as basic as it gets, but be sure to check out the variations section for some more flavor ideas.

- Russet potatoes are the best potato for fries and wedges. They have less moisture than other varieties which helps to keep them nice and crisp. With that said, you can use any potato variety that you want as long as you are ok with a softer texture. Also, it's best to use at least a medium-sized potato.
- Avocado oil or another mild-flavored oil that is suitable for high heat.
- Salt and Pepper
- Paprika - you can level this out or swap it for some of the other seasonings in the variations section.
- Cornstarch - a dusting of cornstarch makes these wedges super crispy. if you don't have cornstarch or prefer not to use it you can leave it out.

Equipment
You will need the following basic equipment to make these potato wedges:
- Pairing knife or vegetable peeler
- Knife and cutting board
- Colander
- Medium or large bowl
- Gallon-sized zip-top bag or another large bowl
- Measuring spoons
In addition to these you will also obviously need an air fryer. There are countless models and the best option for you largely depends upon how much space you have for it, as well as how many people are in your household.
I've tried many different styles and recently got a Ninja Countertop Convection and Toaster Oven. It is great for a larger family so if that's you then I highly recommend it. I also LOVE that it replaces a couple of other gadgets.
How to make Potato Wedges in the Air Fryer

Start out by washing and peeling your potatoes. Then, cut the potatoes into eights lengthwise.

Place the potatoes in a large bowl and cover them with cold water. allow them to soak in the water for at least 30 minutes, but up to several hours.
Tip: Soaking the potatoes removed some of the excess starch and makes the potatoes SUPER crispy. If you want to soak them longer than 30 minutes, then be sure to stick them in the fridge. If you are short on time you can skip this step and just give the sliced potatoes a good rinse under cold running water.

Drain and rinse the potatoes, then pat them dry with a clean kitchen towel. Place them in a large ziplock bag or a large bowl. Add the oil, salt, pepper, paprika, and cornstarch. Toss the potatoes until they are fully coated.

If necessary, preheat your air fryer to 400 degrees. Spray your air fryer basket with non-stick spray then place the seasoned wedges in a single layer on the basket.
Tip: Depending upon the size of your air fryer you may need to work in batches. If your air fryer has a tray instead of a basket then line the tray with aluminum foil and lightly spritz with non-stick spray.

Cook the wedges for 15-20 minutes, tossing them every 5 minutes until they are golden brown. Season with additional salt if desired and serve immediately
Variations
Here are some of my favorite ways to change up this recipe:
- Sweet Potato Wedges or fries - Swap the russet potatoes with peeled sweet potatoes and add an additional 3-5 minutes to the cooking time.
- Seasoned wedges - You can add any seasoning blend that you like during step 3. Some of my favorites to use are cajun seasoning, taco seasoning, ranch powder, old bay, and garlic and herb seasoning. If you add a seasoning that includes added salt, you may want to reduce the salt that you add in step 3.
- Loaded Potato Wedges - After the potato wedges are done, place them in a single layer on a baking sheet. Top them with shredded cheddar cheese and cooked and crumbled bacon. Bake at 425 degrees for 5-10 minutes or until the cheese is melted. Top them with sliced green onions and serve them with sour cream for dipping.

Storage
Unfortunately potato wedges don't reheat very well. If you do have leftovers store them in the fridge for up to five days. For the best results reheat them in the air fryer at 450 degrees for about 5 minutes.

Homemade Air Fryer Potato Wedges
Equipment

Ingredients
- 2 Large Russet Potatoes
- 2 tablespoon Avocado Oil
- 1 teaspoon Paprika
- 1 ½ - 2 teaspoon Salt
- ½ teaspoon Black Pepper
- 3 tablespoon Cornstarch
Instructions
- Thoroughly wash the potatoes then slice them into wedges by cutting them in half lengthwise, then cut each half into fourths lengthwise. Put the sliced wedges in a large bowl, then fill the bowl with ice-cold water. Allow the potatoes to soak in the water for 30 minutes.2 Large Russet Potatoes
- After 30 minutes, drain and rinse the wedges. Pat them dry with a clean kitchen towel or paper towel. If your air fryer requires preheating then preheat it to 400°
- In a large bowl or ziplock bag combine the oil, paprika, salt, and pepper. Add the potato wedges and toss them in this mixture until they are fully coated. Add the cornstarch and toss again until they are coated.2 tablespoon Avocado Oil, 1 teaspoon Paprika, 1 ½ - 2 teaspoon Salt, ½ teaspoon Black Pepper, 3 tablespoon Cornstarch
- Place the wedges in the basket of your air fryer in a single layer. Depending upon the size of your air fryer you may need to work in batches. If your air fryer has a tray instead of a basket then line the tray with aluminum foil and lightly spritz with non-stick spray.
- Cook the potato wedges at 400° for 15-20 minutes, tossing them in the basket (or on the trey) every 5 minutes.
- Serve them immediately with ketchup or the dipping sauce of your choice.
