This is the perfect recipe meal for busy nights and picky eaters. It's on rotation at our house all year round.
Similar to my cheeseburger mac, this recipe is also a homemade take on beef stroganoff hamburger helper. I usually serve it with a bagged salad or steamed veggies for a balanced meal that is ready in mere minutes.

Ingredients and Substitutions
- Ground Beef - You can also use ground turkey or vegan ground beef crumbles
- Salt and Pepper
- Baby Bella Mushrooms - Don't skip these! If you or someone you are feeding don't care for mushrooms, mince them very finely and they will cook down enough to be completely undetectable.
- Fresh Garlic or 1 teaspoon of garlic powder.
- Dried Parsley
- Paprika
- Onion Powder - If desired swap with 1 diced yellow onion. If using fresh onion, add it in along with the ground beef in step one.
- Worcestershire Sauce
- Dijon Mustard (in a pinch yellow mustard will also work)
- Beef Broth
- Half and Half - for a lighter option use milk, or for a creamier option use heavy cream.
- Milk - or use a milk alternative
- Egg Noodles
- Cream Cheese
- Sour Cream

Before you get started ...
Before you start cooking make sure that the mushrooms and garlic are both minced. You will also want to make sure that you have all the other ingredients close at hand since this recipe comes together really quickly.
How to make Ground Beef Stroganoff
Easy is the name of the game with this ground beef stroganoff. Start out by browning the ground beef (seasoned with salt and pepper) in a large skillet over medium-high heat.
Once the beef is cooked through and no longer pink, drain away the excess grease.
Add the chopped mushrooms and garlic to the pan with the cooked ground beef. Continue cooking over medium-high heat stirring frequently, for about 5 minutes.
Tip: To easily drain and dispose of the grease, simply remove the pan from the heat and use tongs to swirl folded-up paper towels in the pan with the beef (I tilt the pan to the side so all the grease collects in one area). If your paper towels become saturated, repeat the process with new towels. The grease-filled paper towels can be disposed of in your kitchen trash can.
Add the spices, Worcestershire sauce, and mustard to the skillet. Stir them in until they are well combined with the beef.
With the skillet still over medium-high heat add the beef broth, half and half, and the milk. Then, stir in the egg noodles ensuring that they are completely covered with liquid. Cook for 5 minutes or until the egg noodles are done.
Reduce the heat to low and then stir in the cream cheese and sour cream. Once the cream cheese is melted remove the pan from the heat and enjoy!
Variations
Here are some of my favorite ways to change up this recipe:
- Make it lighter - If you want to lower the fat and calories in this recipe use extra lean ground beef or turkey and swap the milk and half and half with skim milk or unsweetened plain almond milk. You will also want to use reduced-fat cream cheese and sour cream.
- Meatball Stroganoff - Swap the ground beef for your favorite meatballs for a dish similar to Swedish meatballs.
- Low Carb - Make this ground beef stroganoff low-carb by simply swapping out the egg noodles for cauliflower florets or your favorite low-carb pasta. (I LOVE the pasta by Great Low Carb Bread Co!)
Storage
You can store the leftovers in the fridge for up to 5 days. Reheat in the microwave or on the stovetop. If the sauce has dried out while reheating you can add a little milk to make it creamy again. I do not recommend freezing this dish.
FAQs
Beef stroganoff sauce is made with beef broth, various creams, mustard, Worcestershire sauce, and mushrooms.
If you don't have sour cream you can use plain Greek yogurt or additional cream cheese.
While it isn't ideal, you can substitute chicken broth for beef broth. You may want to add a teaspoon or two of additional Worcestershire sauce to help enhance the flavor.
This recipe uses no flour. A nice thick and creamy sauce is achieved by cooking the noodles in the sauce. The starch released from the noodles helps to thicken the sauce. In addition to this, adding cream cheese keeps the sauce creamy without adding additional liquid.

This recipe was really good! We made some changes as weren't planning on making this for dinner so we used what we had... We added a diced onion first, (so omitted onion powder) then beef, mushrooms, garlic. Also subbed out 2c heavy cream and 4c water with beef bouillon (6 c total) for the beef broth/half and half/cream cheese portion as that's what we had. I love that there is no cream soup in this recipe AND it's ONE POT! I have been making stroganoff for 30 years and will make it this way from now on! Starting with a bigger pot next time...
