    Cilantro Lime Vinaigrette

    You are not going to believe how easy this homemade dressing is. Simply put everything in the blender, pulse a few times and voila, your done!

    Don't worry if you don't have a blender, you can also make this by just finely chopping the cilantro and garlic and then whisking the ingredients together, or even shaking them in a sealed jar!

    Ingredients
      

    • ½ cup packed cilantro stems removed
    • ¼ cup avocado oil, or extra virgin olive oil
    • ¼ cup lime juice (about 2 limes worth)
    • 1 clove of garlic peeled
    • 1 tablespoon white vinegar
    • pinch of salt and pepper, or to taste
    • 1 teaspoon tajin, chili and lime seasoning optional

    Instructions
     

    • Add all ingredients into a blender and pulse until it is smooth. 
    • Serve immediately, or store in a tightly sealed container for up to 2 weeks.

      This was delicious! I literally spooned out what was left after devouring my arugula salad like soup do not a drop was discarded!
